Herisson Rouge 3L

Hérisson Rouge is a vibrant, fruit-forward red wine that captures the essence of southern Burgundy with purity, charm, and craftsmanship. Produced by Domaine Rochebin in the heart of the Mâconnais, this wine is a reflection of tradition, sustainable farming, and low-intervention winemaking. Planted on the upper slopes of east- to southwest-facing hillsides, the sustainably farmed vineyards are hand-harvested at peak ripeness to ensure full flavor and expression.

After full destemming, the grapes macerate for a week before fermenting in temperature-controlled stainless steel tanks over seven days, with gentle punch-downs performed daily. The wine is then racked into cement tanks and allowed to rest for five months, followed by light fining, filtration, and minimal sulfur addition to preserve freshness and character.

Hérisson Rouge opens with generous notes of ripe cherry, plum, and blackberry, complemented by subtle spice and earthy undertones. Its smooth texture and balanced acidity make it endlessly drinkable—perfect with casual fare like grilled meats, pizza, or charcuterie.
